Lamb is a tasty alternative to beef. Orange juice gives this marinade a sweet, fresh taste. Rosemary also perks up the recipe nicely!
Ingredients
For 4 servings, you will need:
| 1/3 cup orange juice |
| 2 tablespoons packed brown sugar |
| 1 tablespoon olive oil |
| 1 teaspoon dried rosemary, crumbled |
| 1/2 teaspoon salt |
| 1 pound lamb loin |
Directions
In a small bowl, whisk together the orange juice, brown sugar, olive oil, rosemary, and salt.
Place the lamb in a shallow glass casserole dish and pour the marinade over the top. Turn the lamb several times to coat. Cover the casserole, and refrigerate for 2 hours, turning occasionally.
Preheat grill or oven to 375º F. Remove the lamb from the marinade. Discard any unused marinade.
Place lamb on preheated grill (if roasting, place on baking sheet). Cook for 15 minutes or until desired doneness. Let stand for 5 minutes. Slice the loin diagonally into 1/2-inch pieces and serve.
